Ingredients

  • 1 cup rolled oats

  • 1/2 cup whole wheat flour

  • 1/4 cup almond flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1/4 cup maple syrup

  • 1/4 cup brown sugar, packed

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup chopped walnuts or pecans (optional)

  • 1/4 cup raisins or dried cranberries (optional)

Directions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together rolled oats, whole wheat flour, almond flour, baking soda, cinnamon, and salt. Set aside.
  • In a large bowl, cream together softened butter, maple syrup, and brown sugar until light and fluffy.
