For the Crust:
1 cup rolled oats
1/2 cup almond flour
1/4 cup brown sugar

2 cups cottage cheese (full-fat or low-fat)
1/2 cup granulated sugar
1/4 cup lemon juice (from about 2 lemons)
1 tablespoon lemon zest
2 large eggs
1/4 cup cornstarch
1 teaspoon vanilla extract
1 cup fresh raspberries

- Preheat your oven to 350F (175C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
