Ingredients
1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
2 tbsp olive oil
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/2 cup buffalo sauce (your favorite brand)
3 cups cooked white rice
4 cups shredded iceberg lettuce
1 cup cherry tomatoes, halved
1 cup shredded cheddar and Monterey Jack cheese blend
1/2 cup crumbled blue cheese
1 large avocado, sliced
1/2 cup ranch or blue cheese dressing, for drizzling
2 green onions, thinly sliced, for garnish
Directions
- Pat chicken dry with paper towels. In a medium bowl, toss chicken cubes with olive oil, garlic powder, salt, and pepper until evenly coated.
- Heat a large non-stick skillet over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes, turning occasionally, until cooked through and lightly browned on all sides.
- Remove skillet from heat. Pour buffalo sauce over the cooked chicken and toss gently until all chicken pieces are well coated.
- To assemble each bowl, start with 3/4 cup cooked rice at the bottom.
- Arrange 1 cup shredded lettuce on one side of the rice.
- Place a portion of the buffalo chicken next to the lettuce.
- Add 1/4 cup halved cherry tomatoes, 1/4 cup shredded cheese, 2 tbsp crumbled blue cheese, and a few slices of avocado to the bowl, arranging them beautifully.
- Drizzle generously with ranch or blue cheese dressing.
- Garnish with thinly sliced green onions before serving. Enjoy your delicious Buffalo Chicken Bowls!
Notes
- Spice It Your Way: Adjust the amount of buffalo sauce to your preferred spice level. For extra heat, add a pinch of cayenne pepper to the chicken seasoning. For a milder flavor, mix the buffalo sauce with a touch of melted butter before tossing the chicken.
- Make Ahead Magic: This recipe is fantastic for meal prepping! Cook the chicken and rice ahead of time, store them separately from the fresh toppings, and assemble your bowls just before serving or the night before for grab-and-go lunches.
- Customize Your Crunch: Feel free to swap out the iceberg lettuce for romaine for a different crunch, or add other favorite veggies like corn, black beans, or even some thinly sliced red onion for extra zing.
