2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe bananas (about 2-3 large)
1/2 cup sour cream
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/4 cup milk (any kind)
1/4 cup brown sugar (for banana swirl)
Directions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round baking pan. Line the bottom with parchment paper.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking soda, and salt. Set aside.
- In a separate medium bowl, combine the mashed ripe bananas, sour cream, vegetable oil, eggs, and vanilla extract. Whisk until well combined.
- Pour the wet ingredients into the dry ingredients. Mix until just combined, being careful not to overmix. Stir in the milk until the batter is smooth.
- Spoon about 2/3 of the chocolate batter into the prepared baking pan, spreading it evenly.
- In a small bowl, combine the remaining 1/3 chocolate batter with the 1/4 cup brown sugar. Stir gently to create a slightly different texture and flavor for the swirl.
- Dollop spoonfuls of the brown sugar-enhanced batter over the chocolate batter in the pan. Use a knife or skewer to gently swirl the two batters together, creating a beautiful marbled effect. Do not overmix the swirl.
