Our favorite Cranberry Almond Biscotti recipe that’s perfectly crisp, packed with tart cranberries and toasted almonds. Ideal for dunking into your morning coffee or gifting to loved ones.

Ingredients

  • 1 ½ cups (180g) all-purpose flour

  • ¾ cup (150g) granulated sugar

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • ½ teaspoon almond extract

  • ¾ cup (90g) dried cranberries

  • ¾ cup (90g) raw whole almonds, roughly chopped

  • 1 teaspoon orange zest (optional, but recommended!)

Directions

  • 1. Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  • 2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  • 3. In a separate medium bowl, whisk the eggs, vanilla extract, and almond extract. Add the orange zest if you’re using it for that extra pop of flavor.
  • 4. Pour the wet ingredients into the dry ingredients. Mix with a sturdy wooden spoon or rubber spatula until just combined. The dough will be quite stiff and sticky.
  • 5. Gently fold in the dried cranberries and roughly chopped almonds until they are evenly distributed throughout the dough.
  • 6. On the prepared baking sheet, divide the dough in half. With lightly floured hands, shape each half into a log, about 10-12 inches long and 2 inches wide. Leave space between them.
  • 7. Bake the logs for 25-30 minutes, or until they are golden brown and firm to the touch. Remove from the oven and let them cool on the baking sheet for 10-15 minutes.
  • 8. Reduce the oven temperature to 300°F (150°C). This lower temperature is key for the second bake.
  • 9. Carefully transfer the slightly cooled logs to a cutting board. Using a sharp, serrated knife, slice each log diagonally into ½-inch thick pieces.
  • 10. Place the sliced biscotti cut-side down back onto the baking sheet. Bake for another 15-20 minutes, flipping them halfway through, until they are dry, crisp, and lightly golden. Let cool completely on a wire rack before storing.

Notes

    • Perfect Slicing: For clean, beautiful cuts, ensure your biscotti logs are slightly cooled but still warm enough not to crumble. A sharp serrated knife and a gentle sawing motion are your best friends here! If they’re too hot, they’ll tear; too cold, they’ll crack.
    • Flavor Boost: Don’t skip the orange zest! It truly brightens up the tart cranberries and adds a lovely fragrant dimension to your Cranberry Almond Biscotti, making each bite even more delightful.
    • Storage Secrets: Once completely cooled, store your biscotti in an airtight container at room temperature for up to 2 weeks. They also freeze beautifully for up to a month – perfect for making ahead for holiday gifting!
