Ingredients
1 cup pitted Medjool dates, packed
1/2 cup rolled oats (gluten-free if desired)
1/4 cup shredded unsweetened coconut, plus more for rolling
1/4 cup almond butter (or other nut butter)
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
Pinch of salt
1-2 tablespoons water, if needed
Directions
- Place pitted dates in a bowl and cover with hot water. Let them soak for 5-10 minutes to soften. Drain well.
- In a food processor, combine the softened dates, rolled oats, 1/4 cup shredded coconut, almond butter, chia seeds, vanilla extract, and a pinch of salt.
