kcalSoft, chewy fig cookies, crowned with fresh fig halves, offering a delightful and quick autumn snack perfect for any occasion.
Ingredients
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats
1/2 cup fig jam or preserves (optional, for extra flavor)
8-10 fresh figs, halved
Directions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.
- In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Stir in the rolled oats until evenly distributed throughout the cookie dough.
- If using, gently fold in the fig jam or preserves for an extra burst of flavor.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Gently press a fresh fig half onto the center of each cookie dough ball.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are just set. The figs will soften and become slightly caramelized.
- Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Fig Freshness: Always opt for ripe, but firm, fresh figs. They should yield slightly to gentle pressure. If they’re too soft, they’ll be hard to slice and might become overly mushy during baking. If you can’t find fresh, dried figs (chopped) can be folded into the dough, but you’ll miss that beautiful top garnish!
- Flavor Boost: Don’t skip the optional fig jam or preserves if you have it! It really amplifies that gorgeous fig flavor throughout the entire cookie, making it taste even more luxurious. A little swirl goes a long way.
- Cooling Patience: It’s tempting to grab one right off the tray, but letting these Fig Cookies cool completely on a wire rack is key. This helps them firm up, giving you that perfect soft, chewy texture without falling apart. The figs will also set beautifully as they cool.
