These healthy Lemon Blueberry Yogurt Bites are bursting with fresh lemon zest and juicy blueberries, nestled in creamy Greek yogurt. A perfect no-bake treat for any time of day!

Ingredients

  • 1 ½ cups plain Greek yogurt (full-fat for creamier results)

  • ¼ cup maple syrup or honey (adjust to taste)

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest (from 1 organic lemon)

  • ½ teaspoon vanilla extract

  • ¾ cup fresh blueberries, gently rinsed

Directions

  • Line a small baking sheet (about 8×8 inches) with parchment paper, allowing some overhang on the sides. This will make it easier to remove the frozen bites later.
  • In a medium ceramic bowl, combine the Greek yogurt, maple syrup (or honey), fresh lemon juice, lemon zest, and vanilla extract. Whisk until thoroughly combined and smooth.
  • Gently fold in the fresh blueberries. Try not to overmix, as this can crush the berries and tint the yogurt too much.
