Ingredients
1 ½ cups rolled oats (not instant)
¾ cup whole wheat flour
1 teaspoon ground cinnamon
½ teaspoon baking powder
¼ teaspoon salt
1 cup unsweetened applesauce
¼ cup maple syrup or honey
2 tablespoons melted coconut oil or unsalted butter
1 large egg
1 teaspoon vanilla extract
1 cup grated apple (about 1 medium apple, skin on or off)
½ cup chopped walnuts or pecans (optional)
¼ cup raisins or dried cranberries (optional)
Directions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together rolled oats, whole wheat flour, cinnamon, baking powder, and salt. Make sure there are no lumps!
- In a separate medium bowl, whisk together applesauce, maple syrup (or honey), melted coconut oil (or butter), egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients. Mix with a spatula until just combined. Be careful not to overmix, as this can make your cookies tough.
- Gently fold in the grated apple, and if using, the chopped nuts and dried fruit. Distribute evenly throughout the dough.
- Drop tablespoonfuls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Use the back of a spoon to slightly flatten them, as they won’t spread much.
- Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set. Baking time may vary depending on your oven.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. This helps them firm up.
- Store cooled cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. They also freeze beautifully!
Notes
- Apple Variety Matters: For a sweeter cookie, choose a naturally sweet apple like Fuji or Gala. If you prefer a tart note, Granny Smith works wonders. Adjust the maple syrup slightly based on your apple choice and preference!
- Make Ahead Magic: These cookies are a meal prep superstar! Bake a double batch on Sunday and freeze individual portions. Pop them into lunchboxes directly from the freezer; they’ll thaw by snack time and be perfectly fresh.
- Spice It Up: Don’t stop at cinnamon! A pinch of nutmeg or a dash of allspice can really elevate the flavor profile. Or for a hint of warmth, try a tiny bit of ground ginger, especially lovely in the cooler months.
