Chewy chocolate chip cookies loaded with graham cracker bits, chocolate, and toasted marshmallows, delivering all the classic s’mores flavor without the campfire.

Ingredients

  • 1/2 cup (113g) unsalted butter, softened

  • 1/2 cup (100g) granulated sugar

  • 1/4 cup (50g) packed light brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/4 cups (150g) all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup (170g) chocolate chips (milk or semi-sweet)

  • 4-5 full graham cracker sheets, broken into 1/2-inch pieces

  • 1 cup (50g) mini marshmallows

Directions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This usually takes 2-3 minutes with an electric mixer.
  • Beat in the egg and vanilla extract until well combined and smooth.
  • In a separate medium bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  • Gently fold in the chocolate chips and about half of the broken graham cracker pieces. Reserve the remaining graham crackers for topping.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  • Bake for 7-8 minutes, until the edges are just set but the centers still look slightly underbaked. This is key for gooey cookies!
  • Remove the baking sheet from the oven. Quickly top each cookie with a few mini marshmallows and a few of the reserved graham cracker pieces, pressing them gently into the warm dough.
  • Return the cookies to the oven and bake for another 2-3 minutes, or until the marshmallows are golden brown and toasted to your liking. Keep a close eye on them to prevent burning.
  • Let the S’mores Cookies cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely. Enjoy warm for maximum gooeyness!

Notes

    • Marshmallow Magic: For that perfect toasted marshmallow top, add them in the last 5 minutes of baking. This prevents them from melting completely into the cookie dough and ensures a beautiful, golden-brown finish, just like a real s’more.
    • Chocolate Choices: While milk chocolate is classic for S’mores Cookies, don’t shy away from dark chocolate chunks or even a mix of milk and semi-sweet. Different chocolates will give a deeper, richer flavor profile that can elevate these treats.
    • Graham Cracker Crunch: To keep your graham cracker pieces from getting too soggy, add half of them to the dough at the very end of mixing and reserve the rest to press onto the tops of the cookies before baking. This provides varied texture throughout, giving you both soft and crunchy graham cracker notes.
