Wholesome and moist Healthy Banana Muffins made with oats and naturally sweetened by ripe bananas, with no added sugar. Perfect for a quick, guilt-free breakfast or snack!

Ingredients

  • 2 ripe bananas, mashed

  • 1 large egg

  • 1/4 cup unsweetened applesauce

  • 1/4 cup milk (dairy or non-dairy)

  • 1 tsp vanilla extract

  • 1 cup whole wheat flour

  • 1/2 cup rolled oats, plus extra for topping

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp ground cinnamon

  • Pinch of salt

  • Optional: 1/4 cup chopped walnuts or chocolate chips (for a touch of sweetness if desired)

Directions

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  • In a large bowl, mash the ripe bananas until mostly smooth.
  • Add the egg, applesauce, milk, and vanilla extract to the mashed bananas. Whisk until well combined.
  • In a separate medium bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are fine.
