Ingredients

  • 1 cup gluten-free all-purpose flour blend (with xanthan gum)

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground ginger

  • 1/8 teaspoon ground cloves

  • 1/4 teaspoon salt

  • 1/2 cup granulated sugar

  • 1/4 cup packed light brown sugar

  • 1/2 cup honey

  • 1/4 cup strong brewed coffee, cooled

  • 1/4 cup vegetable oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

Directions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan with gluten-free flour.
  • In a medium bowl, whisk together the gluten-free flour blend, baking soda, baking powder, cinnamon, ginger, cloves, and salt. Set aside.
  • In a large bowl, whisk together the granulated sugar, brown sugar, honey, cooled coffee, and vegetable oil until well combined.
  • Beat in the eggs one at a time, then stir in the vanilla extract until fully incorporated.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix; a few small lumps are fine.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
