Ingredients
2 cups whole wheat pastry flour (or all-purpose flour)
1/2 cup rolled oats
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Zest of 2 large oranges
1/2 cup fresh orange juice (from 1-2 oranges)
1/2 cup plain Greek yogurt
1/4 cup honey or maple syrup
1/4 cup unsweetened applesauce
1 large egg
1/4 cup melted coconut oil or unsalted butter
1 tsp vanilla extract
Directions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease.
- In a large bowl, whisk together the whole wheat pastry flour, rolled oats, baking powder, baking soda, and salt.
- Add the orange zest to the dry ingredients and rub it in with your fingertips. This helps release the oils for maximum flavor!
- In a separate medium bowl, whisk together the fresh orange juice, Greek yogurt, honey or maple syrup, applesauce, egg, melted coconut oil (or butter), and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spatula just until combined. Be careful not to overmix; a few lumps are perfectly fine!
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean and the tops are golden brown.
- Let the muffins cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
Notes
- Zest is Best: Don’t skip rubbing the orange zest into the dry ingredients! It’s a little trick I learned that really coaxes out all those beautiful, aromatic oils, infusing every bite with brighter orange flavor. Think of it as giving your zest a little flavor massage!
- For Ultimate Moistness: Using a combination of Greek yogurt and applesauce keeps these muffins incredibly moist without relying on a lot of oil or butter. If you don’t have Greek yogurt, regular plain yogurt works too, but Greek will give a slightly richer texture.
- Storage Savvy: These muffins stay wonderfully fresh in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. For longer storage, freeze them in a single layer, then transfer to a freezer-safe bag for up to 3 months. Just thaw at room temperature or gently warm in the microwave!
