Ingredients
2 cups (240g) light spelt flour
1/4 cup (50g) granulated sugar (or less, to taste)
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup (113g) unsalted butter, very cold and cubed
1/2 cup (120ml) milk (dairy or non-dairy), very cold
2 tablespoons strong brewed Earl Grey tea, chilled
2 tablespoons honey
1 large egg yolk
Optional: Zest of 1/2 lemon for extra brightness
Directions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together spelt flour, sugar, baking powder, and salt.
- Add the very cold, cubed butter to the dry ingredients. Use a pastry blender or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
- In a separate small bowl, whisk together the cold milk, chilled Earl Grey tea, honey, and egg yolk (and lemon zest, if using).
- Pour the wet ingredients into the dry ingredients. Mix gently with a fork or spatula until just combined. Be careful not to overmix; the dough will be slightly sticky.
- Turn the dough out onto a lightly floured surface (using spelt flour). Gently bring the dough together and pat it into a 3/4-inch thick round. Do not knead excessively.
- Using a 2-inch round cutter, cut out scones. Re-roll scraps gently and cut out more scones until all dough is used. You should get about 8-10 scones.
- Place scones on the prepared baking sheet. For a golden top, you can brush the tops with a little extra milk or egg wash.
- Bake for 12-15 minutes, or until the tops are golden brown and the scones are cooked through.
