These Butter Almond Caramel Banana Muffins are the epitome of comfort! Fluffy, moist banana muffins crowned with a dreamy cream cheese frosting, a luscious caramel drizzle, and a crunchy almond streusel topping. Perfect for breakfast, brunch, or a sweet afternoon pick-me-up.

Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup (1 stick) unsalted butter, softened

  • 3/4 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup mashed ripe bananas (about 3 medium)

  • 1/4 cup milk

  • 4 oz cream cheese, softened

  • 1/4 cup unsalted butter, softened (for frosting)

  • 1 cup powdered sugar

  • 1/2 teaspoon vanilla extract (for frosting)

  • 1/2 cup store-bought or homemade caramel sauce

  • 1/4 cup chopped almonds, toasted

  • 2 tablespoons light brown sugar

  • 1 tablespoon all-purpose flour (for topping)

  • 1 tablespoon cold butter, diced (for topping)

Directions

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  • In a medium bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Set aside.
  • In a large bowl, cream together 1/2 cup softened unsalted butter and 3/4 cup granulated sugar until light and fluffy.
  • Beat in the 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
  • Add the 1 cup mashed bananas and 1/4 cup milk, mixing until just combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just moistened. Do not overmix.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
  • While muffins cool, prepare the almond topping: In a small bowl, combine 1/4 cup chopped toasted almonds, 2 tablespoons light brown sugar, and 1 tablespoon all-purpose flour. Cut in 1 tablespoon diced cold butter until crumbly.
  • For the Cream Cheese Frosting: In a large bowl, beat 4 oz softened cream cheese and 1/4 cup softened butter until smooth. Gradually add 1 cup powdered sugar and 1/2 teaspoon vanilla extract, beating until light and fluffy.
  • Once muffins are completely cool, frost each with a dollop of cream cheese frosting, drizzle with caramel sauce, and sprinkle generously with the almond topping.

Notes

    • Ripe Banana Secret: Don’t be afraid of super ripe, almost black bananas! The darker they are, the sweeter and more flavorful your muffins will be. They’ll also mash much easier for a smoother batter.
    • Mastering the Topping: For an extra crunchy almond streusel, toast your chopped almonds lightly in a dry pan for a few minutes before mixing them with the other topping ingredients. This really brings out their nutty flavor and adds depth.
    • Caramel Perfection: If your caramel sauce is too thick to drizzle easily, warm it gently in a microwave-safe bowl for 10-15 seconds. This will make it beautifully pourable and irresistible!
