Ingredients

  • 2 large sweet potatoes, peeled and diced into 1/2-inch cubes

  • 1 tbsp olive oil

  • 1 tbsp taco seasoning, divided

  • 1 lb lean ground beef

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 1/2 cup beef broth or water

  • 1 cup cooked white or brown rice (for serving)

  • 1 cup cottage cheese

  • 1 large avocado, sliced or diced

  • 1/4 cup fresh cilantro, chopped

  • Optional: Red pepper flakes for garnish

Directions

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • In a large bowl, toss the diced sweet potatoes with olive oil and 1 teaspoon of taco seasoning until evenly coated. Spread them in a single layer on the prepared baking sheet.
