2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 3 medium)
1/4 cup milk
4 oz cream cheese, softened
1/4 cup unsalted butter, softened (for frosting)
1 cup powdered sugar
1/2 teaspoon vanilla extract (for frosting)
1/2 cup store-bought or homemade caramel sauce
1/4 cup chopped almonds, toasted
2 tablespoons light brown sugar
1 tablespoon all-purpose flour (for topping)
1 tablespoon cold butter, diced (for topping)
Directions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Set aside.
- In a large bowl, cream together 1/2 cup softened unsalted butter and 3/4 cup granulated sugar until light and fluffy.
- Beat in the 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
- Add the 1 cup mashed bananas and 1/4 cup milk, mixing until just combined.
