Ingredients
For the Dough:
1 cup whole milk, warmed to 105-115°F (240ml)
2 ¼ teaspoons active dry yeast (1 standard packet)
¼ cup granulated sugar (50g)
1 large egg, room temperature
½ cup unsalted butter, melted and cooled (113g)
3 ½ cups all-purpose flour (420g), plus more for dusting
1 teaspoon salt
2 teaspoons ground cardamom
For the Filling:
½ cup unsalted butter, softened (113g)
½ cup light brown sugar (100g)
1 tablespoon ground cardamom
1 teaspoon cinnamon
For the Topping:
1 large egg, beaten (for egg wash)
¼ cup pearl sugar
Directions
- Prepare the Dough: In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let sit for 5-10 minutes until foamy.
- Add remaining granulated sugar, egg, melted butter, flour, salt, and ground cardamom to the yeast mixture. Mix with a spoon or stand mixer until a shaggy dough forms.
- Knead the dough on a lightly floured surface or with a dough hook for 8-10 minutes until smooth and elastic.
- Place dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Make the Filling: While the dough rises, combine softened butter, brown sugar, ground cardamom, and cinnamon in a small bowl. Mix until smooth.
- Assemble the Buns: Once risen, punch down the dough and roll it out on a lightly floured surface into a large rectangle (approx. 12×18 inches).
- Evenly spread the cardamom filling over the entire surface of the dough.
- Starting from one long edge, tightly roll the dough into a log.
