Ingredients

  • 300g warm water (105-115°F/40-46°C)

  • 2 teaspoons active dry yeast

  • 1 tablespoon granulated sugar

  • 350g gluten-free all-purpose flour blend (with xanthan gum, or add 1 tsp if not included)

  • 1 teaspoon salt

  • 2 tablespoons olive oil, plus more for greasing

  • Rice flour, for dusting (optional)

  • Ice cubes or water for steam

Directions

  • In a large bowl, combine the warm water, yeast, and sugar. Stir gently and let it sit for 5-10 minutes until foamy, indicating the yeast is active.
  • Add the gluten-free flour blend and salt to the yeast mixture. Mix with a spatula or stand mixer on low speed until a shaggy dough forms.
  • Add the olive oil and continue to mix for 3-4 minutes until the dough is smooth and cohesive. It will be much stickier than traditional wheat dough.
