A wonderfully moist and flavorful banana bread, naturally sweetened with ripe bananas and applesauce. Perfect for a healthy breakfast or snack, with no added sugar!

Ingredients

  • 3 very ripe medium bananas, mashed (about 1.5 cups)

  • 2 large eggs, lightly beaten

  • 1/4 cup unsweetened applesauce

  • 1/4 cup melted coconut oil (or unsalted butter)

  • 1 teaspoon vanilla extract

  • 1 3/4 cups whole wheat flour (or all-purpose flour)

  • 1 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • Pinch of salt

  • Optional: 1/2 cup chopped walnuts or pecans, 1/2 cup sugar-free chocolate chips

Directions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper leaving an overhang.
  • In a large bowl, combine the mashed bananas, beaten eggs, unsweetened applesauce, melted coconut oil, and vanilla extract. Whisk until well combined.
  • In a separate medium bowl, whisk together the whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
  • Add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined. Be careful not to overmix; a few lumps are fine.
  • If using, fold in the optional walnuts/pecans or chocolate chips.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean.
  • Let the banana bread cool in the pan for 10-15 minutes before carefully removing it and transferring it to a wire rack to cool completely.
  • Slice and serve. Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. It also freezes beautifully!

Notes

    • Banana Wisdom: The riper your bananas, the sweeter your healthy banana bread will be! Look for bananas with plenty of brown spots or even entirely brown peels for the best natural sweetness and moisture. This is my secret family trick!
    • Spice it Up: Don’t shy away from the spices! Cinnamon and nutmeg are key players here, adding warmth and depth that really shines without relying on added sugar. Consider a pinch of ginger or allspice for an extra cozy kick, a kitchen memory from my grandmother’s recipe.
    • Storage Savvy: This loaf tastes even better the next day! Store it tightly wrapped at room temperature or sliced and frozen for quick portions. Just thaw a slice or warm it gently in the microwave for a fresh-baked feel.
