Ingredients
2 cups (180g) rolled oats (old-fashioned, gluten-free if desired)
1/2 cup (120g) creamy nut butter (peanut, almond, or cashew)
1/3 cup (80ml) honey or maple syrup
1 tsp vanilla extract
1/4 tsp salt
1/2 cup (80g) mix-ins of choice (mini chocolate chips, chopped dried fruit, shredded coconut, seeds, chopped nuts)
Directions
- Line an 8×8-inch (20x20cm) square baking dish with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment paper.
- In a large microwave-safe bowl, combine the nut butter, honey (or maple syrup), vanilla extract, and salt.
- Microwave the mixture on high for 30-60 seconds, or until it’s warm and smooth enough to stir easily. Alternatively, heat in a small saucepan over low heat until melted and combined.
- Add the rolled oats to the wet mixture and stir well with a spatula until the oats are completely coated.
- Gently fold in your chosen mix-ins (chocolate chips, dried fruit, etc.) until evenly distributed throughout the mixture.
- Transfer the granola bar mixture to the prepared baking dish. Press it down very firmly and evenly using the back of your spatula, a piece of parchment paper, or your hands (lightly dampened to prevent sticking). This is key for bars that hold together!
- Cover the dish and refrigerate for at least 30 minutes, or until the bars are firm.
- Once firm, use the parchment paper overhang to lift the entire slab of granola from the dish onto your wooden cutting board.
- Using a sharp knife, cut into 12 equally sized bars or squares.
- Store the Chewy No-Bake Granola Bars in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 2 weeks for extra firmness.
Notes
- The Sticky Situation: If your bars are too sticky, try adding an extra 1/4 cup of rolled oats or a tablespoon of ground flaxseed to the mixture. Ensure they are pressed *very* firmly into the dish and chilled for at least an hour. A slightly damp spatula or hands help prevent sticking when pressing!
- Mix-In Magic: Don’t be afraid to get creative! Beyond chocolate chips, consider sunflower seeds, pumpkin seeds, chopped pecans, dried cranberries, chopped apricots, or even a sprinkle of cinnamon. Just keep the total amount of mix-ins to about 1/2 cup to maintain the bar’s structure.
- Texture Tip: For an even chewier bar, toast your rolled oats lightly in a dry pan for a few minutes before adding them to the wet ingredients. This deepens their flavor and can enhance the chew. Let them cool completely before mixing.
