1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
For the Cheesecake Filling:
2 (8-ounce) packages cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
¼ cup sour cream
For the Churro Topping:
½ cup all-purpose flour
½ cup packed light brown sugar
1 teaspoon ground cinnamon
½ cup unsalted butter, cold and cubed
For Garnish (Optional):
Powdered sugar, for dusting
Dulce de Leche or caramel sauce, for drizzling
Directions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- **Make the Crust:** In a medium bowl, combine graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Press firmly into the bottom of the prepared baking pan. Bake for 8-10 minutes, or until lightly golden. Let cool slightly.
- **Prepare the Filling:** In a large bowl, using an electric mixer, beat the softened cream cheese and ¾ cup granulated sugar until smooth and creamy. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until just combined. Pour the cheesecake filling over the cooled crust.
