1 cup pitted Medjool dates, packed
1/2 cup hot water
1/2 cup unsweetened applesauce
1/4 cup neutral oil (like avocado or melted coconut oil)
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour (or whole wheat pastry flour)
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 1/2 cups grated carrots (about 2-3 medium carrots)
