kcalA super easy, healthy, and customizable frozen treat made with creamy Greek yogurt, fresh fruits, and crunchy nuts. Perfect for a quick snack or light dessert!
Ingredients
2 cups plain Greek yogurt (full-fat or 2%)
2-3 tablespoons honey or maple syrup (adjust to taste)
1 teaspoon vanilla extract
1/2 cup mixed berries (strawberries, blueberries, raspberries), chopped if large
1/4 cup chopped nuts (almonds, pistachios, walnuts)
Optional: 1 tablespoon shredded coconut
Optional: 1/4 teaspoon cinnamon or cardamom
Directions
- Line a baking sheet with parchment paper, ensuring it extends slightly over the edges. This will make it easier to lift later.
- In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined and smooth.
- Pour the yogurt mixture onto the prepared baking sheet. Use an offset spatula or the back of a spoon to spread it into an even layer, about 1/4 to 1/2 inch thick.
- Evenly sprinkle the chopped mixed berries, nuts, and any optional toppings like shredded coconut or cinnamon over the yogurt layer.
- Gently press the toppings into the yogurt so they adhere well. This helps prevent them from falling off when broken.
- Place the baking sheet in the freezer for at least 2-4 hours, or until the yogurt bark is completely firm and frozen solid.
- Once frozen, carefully lift the parchment paper from the baking sheet and transfer the entire sheet of bark to a cutting board.
- Break or cut the Greek yogurt bark into irregular pieces or squares. Store the bark pieces in an airtight freezer-safe container or bag for up to 2 weeks.
Notes
- Texture Perfection: For the creamiest Greek Yogurt Bark, use full-fat Greek yogurt. It freezes beautifully without becoming too icy. If you prefer a lighter option, 2% works wonderfully too!
- Flavor Adventure: Don’t be afraid to get creative with your toppings! Try tropical fruits like mango or pineapple, a drizzle of peanut butter before freezing, or even a sprinkle of mini chocolate chips for a sweet twist. Just make sure fruits are not too watery.
- Storage Savvy: To prevent freezer burn and keep your bark tasting fresh, store pieces in an airtight container with parchment paper between layers. This prevents them from sticking together and preserves their deliciousness for longer.
