Ingredients

  • 1 ½ cups whole wheat flour

  • ½ cup rolled oats

  • ½ cup granulated sugar (or coconut sugar)

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 cup buttermilk (or milk + 1 tbsp lemon juice/vinegar)

  • ⅓ cup unsweetened applesauce

  • ¼ cup melted coconut oil (or vegetable oil)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup fresh raspberries

  • ½ cup dark chocolate chips (60% or higher cacao)

Directions

  • Preheat oven to 375F (190C). Line a 12-cup muffin tin with paper liners or lightly grease.
  • In a large bowl, whisk together the whole wheat flour, rolled oats, sugar, baking powder, baking soda, and salt.
  • In a separate medium bowl, whisk together the buttermilk, applesauce, melted coconut oil, egg, and vanilla extract until well combined.
